The Prior’s Bread Flours

The Prior’s Organic Wholemeal Flour

From April 2020 we are milling a Paragon variety wheat from Woodlands Farm, Lincolnshire. The flour is getting rave review with a protein content of 13.7%, it is silky, extensible and produces fantastic loaves! It has a delicious nutty flavour, excellent for pastry as well as bread.

The Prior’s Organic Wheaten Meal

Our Wheaten Meal is a coarse wholemeal flour designed for baking Soda Bread or adding to other doughs to build a more crunchy crumb! Milled from our 2019 Paragon wheat, it has a lively texture given the protein content.

The Prior’s Organic White Flour

Our unbleached white flour is milled from 2019 harvest Paragon grain, grown at Woodlands Farm, Lincolnshire. The flour is fantastic with a protein content of 13.7%, it is silky, extensible and produces fantastic loaves – see the pictures in the gallery! The white flour is produced by sieving wholemeal flour to produce a creamy white meal, with a deep delicious flavour.

The Prior’s Organic Rye Flour

Our rye flour is milled from 2019 harvest organic grain grown. Enjoy the delicious full nutty flavour with some truly sweet hints, almost caramel! Rye flours are challenging to work with, expect the dough to be sticky to work with, but worth the hassle.

The Prior’s Organic White Rye Flour

Our white rye flour is also milled from 2019 harvest organic grain. The flour is produced by sieving wholemeal rye through a fine mesh to release the white starch grains. Enjoy the delicious full nutty flavour with some truly sweet hints, almost caramel! Rye flours are challenging to work with, expect the dough to be sticky to work with, but worth the hassle.

The Prior’s Organic Cracked Rye Flour

Cracked rye is a very coarse meal – the rye grain is kibbled by passing it through the millstones with the tentered apart. This type of meal is very popular in Nordic countries and is produced for recipes that come from this area. Add the cracked rye to your breads to give the crumb a lovely crunch!

The Prior’s Organic Spelt Flour

The Prior’s Malted MultiseedFlour

Our malted multiseed flour is a delicious blend of white flour, malted wheat flakes and the following seeds – sesame, pumpkin and sunflower. It has a lovely malty flavour, punctuated by the mix of seeds. A must-buy for the discerning bread baker!

Note – although made with organic flours, due to the added non-organic ingredients, this is not classed as an organic flour.

 

The Prior’s Dark Malt Flour

This flour will delight you – a stunning blend of white, wholemeal and spelt flours along with seeds and dark malt which produces a malty, open crumb, light bread with a delicious chocolate colouration! Amaze your friends! Delicious with smoked salmon…!

Milling will commence in around 10 days from now once we’ve finished the last sacks of our stunning 2019 harvest grain. Sadly our East Anglian grain options did not hit the quality mark this year.
