We are milling an excellent crop of spelt from Hill Farms, Bradenham, Norfolk. The flour produces a silky dough which delivers a lively loaf with an intense nutty flavour! Norfolk grown, Cambridgeshire milled!

    Fabulous flour. Can take a high proportion of water, I tried 70% and the dough was still workable. Rose pretty well for a 100% wholemeal loaf, especially given I included some mixed seeds.. Gave a soft and almost creamy taste and texture. Try organic maple syrup rather than sugar if you want to give the yeast a bit of a boost at the start!

We tested 4 samples and I’m pleased to say that by blending sample 4 with some of the excellent 2020 crop you’ve been enjoying, we come up with a great flour as you can see in the attached crumb shots.
