To produce our self raising flour, we add raising agents to our Organic Plain Flour. The flour is made from a new variety of wheat called Bamford – a lower protein variety, typically around 9% protein. This ensures that your Victoria Sponge avoids both a soggy bottom and makes a generous rise to grace your afternoon tea table!
