Lys Brun is a heritage Landrace Wheat which likely originated from Scandinavia or France. It’s name means “light brown” and it has characteristics similar to the French “Automne Rouge Barbu”. In the field, the plants grow tall with deep roots which enable it draw on nutrients from depth in the soil. It is grown for us at Camp Green Farm, Stowmarket, Suffolk. The flour has a rich aroma and flavour.
The Lys Brun White Flour is a soft, rich, white bread flour to use either blended with other flours or on its own. It has great colour and texture! Be ready to experiment and adapt your standard recipes to take advantage of the unique qualities of this heritage flour!

A really lovely flour that’s satisfyingly pliable and a joy to need by hand (minimal folding method). My normal flour is Prior’s Organic White hydrated to around 80%, but this [The Lys Brun] doesn’t have the gluten structure to cope with that so for me I get a better result at around 72% and even then it benefited from the extra support of a loaf tin. You could mix with a stronger flour, but I feel that misses the point of using a heritage wheat in the first place, which is all about unique texture, smell and flavour. Needless to say the wholewheat is top notch too. These two new flours are a great performer as a sourdough or with an instant yeast and works very well for pizza bases too.
