The Prior's Organic Wholemeal Flour

From January 2018 we are milling 2017 harvest Mulika organic grain grown at Bluebell Farms, near Peterborough Cambridgeshire. The flour is getting rave review with a protein content of 13.6%, it is silky, extensible and produces fantastic loaves! It has a delicious nutty flavour, excellent for pastry as well as bread.

Cambridge Wholemeal

The Prior’s Organic Wheaten Meal

Wheaten Meal is a coarse milled wholemeal flour designed for soda bread. Our Irish customers love it and come for miles to purchase it! It is milled from 2017 harvest Mulika organic grain grown at Bluebell Farms, near Peterborough, Cambridgeshire.

This award winning unbleached white flour is also milled from the stunning 2017 harvest Mulika organic grain grown at Bluebell Farms, near Peterborough, Cambridgeshire. The flour is fantastic with a protein content of 13.6%, it is silky, extensible and produces fantastic loaves – see the pictures in the gallery! The white flour is produced by sieving wholemeal flour to produce a creamy white meal, with a deep delicious flavour.

Cambridge White

The Prior's Organic Rye Flour

Our rye flour is milled from 2017 harvest Carotop organic grain grown at Hammonds End Farm, Harpenden. Enjoy the delicious full nutty flavour with some truly sweet hints, almost caramel! Rye flours are challenging to work with, expect the dough to be sticky to work with, but worth the hassle.

Organic Rye

The Prior's Organic White Rye Flour

Our white rye flour is also milled from 2017 harvest Carotop organic grain grown at Hammonds End Farm, Harpenden. The flour is produced by sieving wholemeal rye through a fine mesh to release the white starch grains. Enjoy the delicious full nutty flavour with some truly sweet hints, almost caramel! Rye flours are challenging to work with, expect the dough to be sticky to work with, but worth the hassle.

The Prior's Organic Cracked Rye Flour

Cracked rye is a very coarse meal – the rye grain is kibbled by passing it through the millstones with the tentered apart. This type of meal is very popular in Nordic countries and is produced for recipes that come from this area. Add the cracked rye to your breads to give the crumb a lovely crunch!

The Prior's Organic Spelt Flour

Our spelt flour (wholemeal) is milled from 2016 harvest Alkor variety organic grain grown at Home Farm, Wimpole near Cambridge. Spelt flour has a lovely nutty flavour and a higher oil content than other varieties of wheat.

Spelt is a variety of wheat which is related to varieties of wheat grown in Roman times. It is genetically different from modern varieties of wheat and has a different type of ear, leaf system and stalk height. The wheat grains are protected by a coarse husk which has to be removed in a de-hulling process before the grain is fit to mill. Occasionally, you will find some small pieces of the coarse husk in the flour as the process is not 100% fool proof!

Our malted multiseed flour is a delicious blend of white flour, malted wheat flakes and the following seeds – sesame, pumpkin and sunflower. It has a lovely malty flavour, punctuated by the mix of seeds. A must-buy for the discerning bread baker!
